TriTip on the UDS
If you have never heard of Tri-Tip you don't know what you're missing!
I love to smoke TriTip on the ugly drum smoker!
I like to make some homemade santa maria seasoning to go on it.
In the seasoning is
Chili powder, kosher salt, black pepper, cayenne pepper, brown sugar, cumin, garlic, and onion powder.
Trim the fat and the silver skin off so it will be ultra-tender.
Cook at 300*F on the drum
Internal temp when ready to pull should be about 130*F to 138*F depending on your prefrence. I like it medium rare so I pull it at the 130*F temp. then I wrap and hold for 1 hour or so. Should be sliced thin across the grain.
